On Top of Spaghetti: A Few Facts About Meatballs

It’s the traditional start to the Sunday dinner in most Italian families, served warm with fresh mozzarella cheese, crisp italian bread and fried hot peppers. Whether they are fresh from the pot, or simply gracing a heap of spaghetti, nothing beats a meatball! Heres an amazing fact about making meatballs: Give ten people the same basic recipe and each batch will turn out differently. Go figure… No one really knows the true origin of the meatball but in an 2003 article entitled Ask the Chef John Piso describes it this way: Meatballs originated in some Italians kitchen when she found that she had some ground beef left over. Hamburger meat was popularized at the turn of the last century, so it makes sense to assume that meatballs started then, as did meat loaf. I could just see some nice Italian housewife ready to make a tomato sauce and find some left over ground meat in her ice-a -box-a. Always having eggs, parsley, garlic, cheese, and hard bread around, she must have felt a surge of lightning that hit her with this idea. Ground meat, garlic, cheese, breadcrumbs, parsley, and some beaten egg to hold it all together. Fry it in oil; drop it in the sauce and Bingo! Two courses in one pot - pure genius! Then comes what I call the Christopher Columbus question about meatballsWhy are meatballs round? Because its a meat-ball, silly. Actually, if meatballs were flat, theyd break apart when stirred in tomato sauce. Hand size is also a factor. Big hand, big meatball, small hand, small meatball. Wikipedia, The Free Online Encyclopedia, describes a meatball as a generally spherical mass of minced meat and other ingredients, such as bread or breadcrumbs, minced onion, various spices or eggs, usually fried in a pan or baked in an oven. Except for shape and size (there’s usually more than one meatball per serving), meatballs are very similar to meatloaf. That may be half true. A meatball is only similar to a meatloaf because of the ingredients that cement it togther. The meatloaf is a traditional American dish, made in a loaf form, sometimes stuffed, sliced and covered in brown gravy. A meatball is the stuff that dreams are made of because theres a nostagia factor here: I recall sleeping in on a Sunday morning and waking to the most delicious smell in the world, then entering the kitchen and hearing that sweet sound of meatballs sizzling in a frying pan.its always so hard to resist grabbing one. Cant get that feeling from a meatloaf! Is a meatball by any other name still a meatball? The answer is Yes, because one ingredient remains constant: Ground Beef. The ancient Roman cook-book author Apicius included many meat ball-type recipes: Albanian fried meatballs (Qofte t frguara) include feta cheese. Danish meatballs are known as frikadeller and are typically fried, and they are usually made from pork. In Germany, meatballs are called Frikadellen (in the North) or Buletten (in the East) or Fleischpflanzerl or Fleischkchle if you happen to be in the South In Greece, meatballs are called ‘keftedes’ and usually include within the mix onions and mint leaf. In Italy, meatballs are know as polpette. Outside of Italy, they are commonly served with spaghetti as in “spaghetti and meatballs”. The Japanese hamburger steak hanbagu is based on similar ingredients. In Norway, meatballs are called kjttkaker (”meat cakes”) and resemble Danish frikadeller, but they are usually made from ground beef. The dish is traditionally served with boiled potatoes, gravy, lingonberry jam and/or stewed green peas. Some people also like to add fried/caramelized onion on the side. Swedish kttbullar (Swedish meatballs) are made with ground beef or a mix of ground beef and pork, mixed with breadcrumbs soaked in milk and finely chopped onions. They are seasoned with white pepper and salt. Swedish meatballs are traditionally served with gravy, boiled potatoes, lingonberry jam, and fresh pickled cucumber. (In the television show Babylon 5 all alien races have swedish meatballs, although with different names) Turkish cuisine features more than 80 types of meatballs (kfte), most being regionally made. The meatball is so well loved that we even sing about it. Check out the American classic On top of Spaghetti by Tom Glazer which features a wayward meatball. For decades he had a chorus of children singing lines like: On top of spaghetti all covered with cheese. I lost my poor meatball when somebody sneezed. It rolled off the table, it rolled on the floor, And then my poor meatball rolled out of the door. It rolled in the garden and under a bush, And then my poor meatball was nothing but mush. The mush was as tasty as tasty could be, And early next summer it grew to a tree. The tree was all covered with beautiful moss. It grew great big meatballs and tomato sauce. So if you eat spaghetti all covered with cheese, Hold on to your meatball and don’t ever sneeze. Now that I’ve told you all these wonderful facts about the Meatball, here’s some friendly advice: It isnt very nice to call someone a Meatball. Some of these people who, be they relatives, friends, neighbours or people we hear about in the mass media, may have been living together, in an ongoing state of irritation with conflict and anger on virtually every issue surrounding their life together, can suddenly make dramatic shifts, quite readily, in their consciousness. What became a relationship consistently of conflict or anger that had suffocated their love and happiness for many years disappears, with their disagreements fading away and becoming insignificant and their love for one another, OR LIFE IT SELF, re-emerges as though it had never left.What happens to cause this change of heart? Quite simply, we don’t know exactly how this sudden shift occurs or even when this kind of shift will occur. We do know that they exist and that they can and do occur. A sudden shift in awareness can occur in any area of human life that has to do with how we feel. Remember when you were much younger you probably believed in perhaps Fairies or fairy story characters or perhaps a more personalised manifestation such as a monster. At some point you realised what had been very real to you no longer existed as part of your reality. What was it that made you realise that these things were no longer real and that they or it, had only existed in your own mind? Why, at that particular time did this new level of understanding happen? Most of us go through these shifts in life. The imagined characters that seem real when we are young are predictable shifts but do vary greatly when the shift in our consciousness occurs. People have moments of autonomy, if only fleeting. Gaining the ability to achieve greater periods of sustained self-sufficiency is desirable as it enables you to become a whole person and enriched. Shifts occur when we look at the same set of facts or scenario in a new way producing another insight or understanding. Our ultimate concern or simply put our goal be it a shift or continuity or not, is what dictates control of our life and as a consequence our happiness. That ultimate concern determines other values, beliefs, associated goals, feelings, and actions. When we make other people’s approval our ultimate concern, then we make them our dominant force. We give up control of our lives and happiness. Seek your own approval not theirs. Let everyone have primary responsibility for his or her own happiness. Confusing “means” with “ends.” It’s not that having financial or career success cannot contribute to happiness. They obviously can contribute. But if one makes these means to happiness their end goals, then they become so focused upon the means that they may lose sight of the end happiness. We do not have one ultimate concern, as most of us are far too diverse or disorganised or confused to be dedicated to what our most important value is or may be. We all owe allegiances to several valued concerns that constantly conflict with one another sometimes to our knowledge and at other times are simply not considered. We have inner scuffles between our desires for success, love, friendship, security, fun, and contentment. Lack of integration among our higher values underlies much of our regular confusion and anxiety. Some people are afraid that if they make their own happiness a primary goal in life, they will become, too self-indulgent. Happiness is probably the only human state that measures our overall physical and mental well being. It results from harmonising among our inner parts. We cannot deny important parts of ourselves and be fully happy. Happiness and love go hand-in-hand. Loving someone means we value his or her happiness. When we feel love, we feel happy, even if the love is for an object, an activity, or a person. Responsibility follows control, so it follows that we are have greatest responsibility for our own happiness. Why should someone else be more responsible for my happiness then I am-or vice-versa? Have you ever been in a situation where no one will say what they really want and people are trying to make sure they please the other(s)? For example in trying to decide which restaurant to go to, one says, “Where do you fancy to eating?” “I don’t care; what do you want to eat?” This continues until both people become thoroughly frustrated. Is it not better if both people say what they want while considering the other’s wishes? How do you feel about other people being primarily in charge of your happiness? How happy would you be if you sacrificed what you wanted so that you can give it up to someone else? Do you feel more like doing something when you are doing it because you think you “should” or because you think it will make you happy? Happiness is a moment-by-moment choice that each of us make. We must first choose to be happy and then make a commitment to that choice without changing anything in your life except your relationship with your own thinking. Do not confuse a commitment to happiness with a way to make life better in some way. This may seem strange at first but I am sure you can recall changes in your circumstances that have not lead to an improved level of happiness. Earning additional money, solving a problem, acquiring qualifications does not produce happiness. Happiness exists independently of your circumstances. Happiness is a feeling you can learn to live in. Everything in your life is a consequence of the way you relate to your thinking. Commitment is an obligation and makes change much easier by removing uncertainty and anxiety and provides the freedom to let go of concerns as it fosters hope. Without commitment success in any venture is difficult. If you are dieting, stopping smoking, studying, starting a project or deciding to be happy, commitment is an important step. There is a great deal in life that is beyond your control. External circumstances touch us all, illness, accidents, other people’s reactions and their choices, all impact upon us. Despite all this you can make a choice regardless of what happens to be happy unconditionally. Attaching happiness to an outcome will simply create the same mental process to each specific outcome. Believing that happiness will come once you are married then leads on for example to being happy once you have children which then creates new circumstances to develop a new desire to obtain happiness having achieved the goal. For example, perhaps when your children pass certain stages in life such as the terrible two’s/ starting nursery/primary/secondary/sixth form/University/have a job/left home/get married is out the way, happiness will evolve and then you will be happy once you have enough money to meet the growing family needs. Believing that by solving our problems or improving our relationships will create contentment but this means that our happiness must be postponed until some future time when the preconditions are met. You may believe that you will one day arrive at a place, happiness but it will not be sustained without the decision to be happy. There is no way to happiness as happiness is the way if you are committed to the decision. Your commitment to happiness itself should let go of all your preconditions. No matter how difficult it seems learn and practice the mental processes that will lead to happiness. Being happy isn’t always easy. It can be one of the great challenges in life. Mature and take responsibility for your own happiness - right now. Understanding is the common sense of knowing something in the here and now and that our life experience comes from the inside out and not from the outside in. You cannot teach a man anything. By Kenneth C. Hoffman Ceramics has marked the progress of civilization for thousands of years, preserving the talents of countless artisans. With very little instruction, there exists the possibility that you, too, can be a part of history. My personal experience with ceramics was brief, but spiritual. A local Catholic school in my area boasted a wonderful ceramist on staff so I signed up for a beginner’s course. The Sister radiated a passion for excellence in ceramic making that insured a high level of interest in her pupils. It was a charming sight watching this holy person working madly amidst flying clay and water. The class was invited to travel to an area in New Jersey that contained a deposit of clay suitable for ceramics. I could not participate in this field trip, but I did get to use some of the clay that they gathered. After a thorough grounding in the hand building of pots, we chose a design of our own for a project. I fashioned a hanging pot of my own design, hour-glass shaped with a free curve formed bottom and kidney-shaped windows stretching to the top. Every week I shaped and carved the leather-like property of the semi-dry clay until it satisfied my artistic senses. When completely dry, I fired it in a twenty-four inch electric kiln at a temperature of 2300 degrees. An application of a natural brown glaze containing yellow and black speckles required a second firing. The first sight of the true colors of the cooling pot was an unforgettable experience, not a straight line to be found from the inwardly curving bottom to the curves reaching to the top. The annealing took place over a period of several days and the addition of a coarse raffia rope allowed it to hang from the ceiling like an amoebae dividing itself. The sheer variety of ceramic art objects and their long lasting properties are what make this hobby an exciting world to explore. Everyone should allow their creative selves free rein to fashion directly from mind to hand a piece of their own soul. With materials costing but pennies, every hand-made pot is unique and each one satisfies mankind’s urge to create something beautiful and useful. At retirement, I find time for a myriad of hobbies. By Dev Sri Ayurveda has been attributed a divine origin. It is believed that Ayurveda has no origin or end. It is both alpha and omega. Veda is science or knowledge. Knowledge has neither beginning nor end. Ayurveda resides in the eternal cosmic universe, in the protection of gods through the cosmic cycle of creation and destruction. All the physical universe is dispelled and recreated. There is no such re-creation for knowledge. The knowledge is passed to humans through selected people at appropriate times. According to Indian Vedic tradition the main idea of mankind getting the knowledge of life (a k a Ayurveda) is by a gift by Lord Indra. The original source of knowledge of life is Lord Brahma, who is also the creator of the whole universe. He taught Aswini twins or Aswini gods the science of life. They then passed the knowledge over to Lord Indra, which he gave to some holy seers. A group of seers met together to find a solution to the ailments that afflict humans. Their path to knowledge is deep meditation, where they are raised to a level of cosmic enlightenment. Lord Indra found these seers fit to handle knowledge of life or Ayurveda (Ayur- life, veda knowledge or science). The seers became vaidyas or doctors who treated the diseased and passed the knowledge orally to their disciples. There were no written texts for Ayurvedic knowledge till a seer named Veda Vyasa compiled the knowledge in writing. Ayurveda or knowledge of life is spread across the four Vedas Rig Veda, Sama Veda, Yajur Veda and Atharva Veda. However the knowledge was spread in an unorganized manner throughout the Vedas and other ancient scripts like Aranyakas and Upanishads. It was only between 1,400 and 1,000 BC that Ayurveda got a written reference material. Charaka Samhitha by Acharya Charaka and Sushrutha Samhita by Acharya Sushruta and the compilation of the two books, Asthangahridaya by Acharya Vagbhata are the earliest known organized literature on Ayurveda. These three books Charaka Samhita, Sushrutha Samhita and Astangahridaya are the basic treatises of Ayurveda.
